botanical garden with meemaw

schools out for the summer!! Wednesday's will now consist of spending time with meemaw and our cousin:)
first up...






we did make an attempt to visit the children's garden however seany and vito were trying to perfect their disappearing acts and this momma was about to have a nervous breakdown.  i'm soo gonna have to order some id bracelets or something...i'm not kidding...better than leashes don't ya think.

busy weekend

wow... this weekend was one of the busiest weekends we've had in a while!  the schwartz clan gathered together on saturday morning to embrace just how special we think this boy is...




my nephew camden and his amazing family...


saturday afternoon seany went to a birthday party at swing around fun town

saturday evening we all went to dinner and then took a trip out to see daddy's new quik trip

sunday morning we met up with the schwartz clan once again for the annual olympics

sunday evening we celebrated a special girl and her big accomplishments...
angel...seany's godmother, our babysitter, and family friend.  this girl rocks!!



angel is now a college graduate!!  she had a party...asked me to bring my camera...i said hell ya!!!

mommas day

 this mothers day was my fifth year celebrating and it gets better and better each year.  in the beginning i celebrated my motherly duties with special little people i loved as my own...









celebrating with little ones that are here to stay is a feeling like no other...shame on me for not getting a pic of me and my boys:(

hank and i celebrated with our moms along side a special dinner and a beautiful evening out on the patio...

recipes...


i finally decided to test  a couple of the recipes i had pinned on pinterest.  both were delicious and simple!!




beef pot pie cupcakes




Ingredients
  • 1/4 pound lean ground beef, browned & drained well
  • 1 cup frozen mixed vegetables
  • 1 can (10 3/4 ounce) condensed cream of mushroom soup
  • 12 Pillsbury Grands home style refrigerated biscuits
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Fresh ground pepper, to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, mix all ingredients except biscuits. Reserve half of the cheese for topping.
  3. Spray muffin tin with cooking spray. Form biscuits to each muffin cup.
  4. Evenly spoon beef mixture into each cup. Top with remaining cheddar cheese.
  5. Bake for 12-15 minutes, or until biscuits are golden brown & cheese is melted.


taco stuffed pasta shells




Ingredients:1lb ground beef
1 package taco seasoning
1 4 once package cream cheese
12 large pasta shells
1 cup salsa
1 cup taco sauce
1 cup cheddar cheese (shredded)
1 cup Monterey jack cheese (shredded)
1 ½ cups tortilla chips (crushed)
3 green onions (chopped)
1 cup sour cream
 
Step 1: In a fry pan cook ground beef and add taco seasoning and prepare according to package directions. Add cream cheese cover and simmer until cheese is melted. Blend well. Set aside and allow to fully cool. While burger is cooking cook the pasta shells, drain and toss well with butter.
Step 2:  Pour salsa in the bottom of a 9 x 13 inch baking dish.
Step 3: Stuff each shell with the meat mixture. Place the stuffed shells in the baking dish and cover the tops of the shells with taco sauce.
Step 4: Cover and bake in the oven at 350 degrees for 30 minutes.
Step 5: After 30 minutes, uncover, and sprinkle crushed chips and shredded cheddar and Monterey jack cheeses on top.  Cook for about 15 more minutes. Serve with sour cream, additional salsa, black olives or whatever you think goes good with tacos!
