breakfast casserole

just wanted to share this easy recipe for a breakfast casserole.  we ate this for dinner, but would be great for easter morning!



12 eggs
2 cups milk
salt and pepper
1lb ground pork sausage, or ham
3cups shredded hash brown potatoes
2 cups shredded cheddar cheese


  • lightly grease a 9x13 glass baking dish
  • brown pork sausage
  • whisk eggs and milk in large bowl
  • put hash browns on bottom of baking dish 
  • layer sausage and then cheese
  • pour egg mixture evenly over everything 
  • bake at 350 degrees for 50 min
  • enjoy

recipes...


i finally decided to test  a couple of the recipes i had pinned on pinterest.  both were delicious and simple!!




beef pot pie cupcakes




Ingredients
  • 1/4 pound lean ground beef, browned & drained well
  • 1 cup frozen mixed vegetables
  • 1 can (10 3/4 ounce) condensed cream of mushroom soup
  • 12 Pillsbury Grands home style refrigerated biscuits
  • 2 cups shredded sharp cheddar cheese, divided
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Worcestershire sauce
  • Fresh ground pepper, to taste
Instructions
  1. Preheat oven to 400 degrees F.
  2. In a large bowl, mix all ingredients except biscuits. Reserve half of the cheese for topping.
  3. Spray muffin tin with cooking spray. Form biscuits to each muffin cup.
  4. Evenly spoon beef mixture into each cup. Top with remaining cheddar cheese.
  5. Bake for 12-15 minutes, or until biscuits are golden brown & cheese is melted.


taco stuffed pasta shells




Ingredients:1lb ground beef
1 package taco seasoning
1 4 once package cream cheese
12 large pasta shells
1 cup salsa
1 cup taco sauce
1 cup cheddar cheese (shredded)
1 cup Monterey jack cheese (shredded)
1 ½ cups tortilla chips (crushed)
3 green onions (chopped)
1 cup sour cream
 
Step 1: In a fry pan cook ground beef and add taco seasoning and prepare according to package directions. Add cream cheese cover and simmer until cheese is melted. Blend well. Set aside and allow to fully cool. While burger is cooking cook the pasta shells, drain and toss well with butter.
Step 2:  Pour salsa in the bottom of a 9 x 13 inch baking dish.
Step 3: Stuff each shell with the meat mixture. Place the stuffed shells in the baking dish and cover the tops of the shells with taco sauce.
Step 4: Cover and bake in the oven at 350 degrees for 30 minutes.
Step 5: After 30 minutes, uncover, and sprinkle crushed chips and shredded cheddar and Monterey jack cheeses on top.  Cook for about 15 more minutes. Serve with sour cream, additional salsa, black olives or whatever you think goes good with tacos!

playing with food

the boys and i went to target the other day, which by the way is our all time favorite store.  i promised them if they were good we could eat lunch at the food bar...
 i see you mom!!
 i got new glasses!!
we discovered funyuns look like the letter O, the number 0, glasses, and a full moon,  take a bite
and now you have the letter U, a rainbow, and a crescent moon.  i never expected a learning lesson when i picked up the bag of funyuns.


my seany bear is a pretty good eater but always seems to push most things dairy to the wayside.  i've been trying to think of new ways to disguise it and i've heard from a few friends that their little ones enjoy smoothies!! he tried a few sips but he's not completely sold on it yet.   anyway heres a simple recipe if you wanna give it a whirl!! hank and i think they are super tasty!!


strawberry banana smoothie
  1. 4 fresh strawberries 
  2. 1 whole banana
  3. 1/2 cup vanilla yogurt (i used nonfat)
  4. 1/2 cup apple juice (our juice is always watered down)
  5. 1 tall glass of ice


dump it all in the blender 


soooo good and healthy too!!

yummy baked potato soup recipe

 

what you will need:

4 large baking potatoes
11 table spoons butter or margarine
2/3 cup flour
7 cups milk
3/4 tsp. salt
1/2 tsp black pepper
1/2 tsp white pepper
4 green onions chopped in tiny pieces
12 slices cooked bacon crumbled
1 1/4 cups cheddar cheese
8 oz sour cream


lets get cooking

bake potatoes for 1 hour at 400 degrees
scoop out pulp and set aside
melt butter in large pot over low heat and add flour, stirring until smooth (cook 1 min)
gradually add milk, cook over medium heat, stirring constantly until thick and bubbly
add potato pulp, salt, pepper, 2 tbs green onions, half the bacon, and 1 cup of cheese
cook until throughly heated
stir in all the sour cream at the end
top each bowl with remaining cheese, onions, and bacon pieces


tips to speed up the process


cook potatoes in microwave
buy a package of bacon pieces (not the hard bits)
do not stop stirring, it burns very easily on the bottom
you can never have to much cheese on top, use as much as u want
enjoy
very good reheated
